As a mom, one of the most exciting times of the year is back to school.  Just the mention of ‘back to school’ is nostalgic, don’t you think?  Add in your own kiddos and the excitement of the opportunities the year ahead holds for them and it’s almost too much to handle.  No matter what grade your kids are heading into or how many little ones you may still have at home it is a super fun time of year.  OK, I guess I shouldn’t pretend I’m not a little excited to have some order restored to our routines as well!  As much as we love lazy mornings in our pajamas and afternoons at the pool there comes a time of summer where we all just need something new and exciting!

We don’t do a ton of back to school shopping; however there is at least one day I haul the kiddos off to stock up on the items on the list their teacher sent them as well as the traditional back to school shoes.  But that’s all for the kids.  What I get excited about is starting to think of new creative and clever ways to make their days away from me special.

That’s where stocking up our pantry comes into play.  This is the fun part for me as a mom, knowing I have everything in my supply to keep everyone fed and happy.   I love knowing they will be excited when they open their lunch box in the middle of the day because it contains their favorite things. There is nothing worse than having them come home from school with half their lunch still in their box – so frustrating!  That’s why we headed off to our local ShopRite to load up on all of our favorites!

We love shopping at this new ShopRite store not too far from home.  They had everything we needed to stock up for a successful week of back to school meals.  I love how easy it is to maneuver through this store with the wide well marked aisles.  It’s always so easy to find what I’m looking for; they even have signage partway through the aisle to highlight items you could easily miss.  Wandering the aisles of this ShopRite made me so excited to create some new fun goodies for the kids’ lunches this year while grabbing some of our staples like Jif Natural Creamy Peanut Butter and Smucker’s Strawberry Preserves, along with Ziploc® Sandwich Bags.

The classic Peanut Butter and Jelly sandwich is a sure win in our house.  I may even sneak one on occasion when the kids are at school! As a mom, nothing is better than knowing your kids are getting a good dose of protein with the sweetness they love – coupled with using the same trusted brands you and your mom have used for years and years.  I can still remember Smucker’s Strawberry Preserves in my mom’s kitchen!  I’m not sure who first thought to put those two ingredients together, but they sure were genius.

Over the past few years our kids have really been into having a lunch of ‘snacks’ some days.  They love the bento box concept and I must admit it is fun to put together a bunch of things they enjoy that aren’t necessarily a sandwich.  But who can leave the PB&J out, really?  So I started brainstorming on other ways to still incorporate these time honored ingredients into their lunch boxes.

That’s when I came up with these Peanut Butter & Jelly Mini Sandwich Cookies.  They are the perfect sweet treat to pop into their lunch in a Ziploc® Sandwich Bag! Using the Jif Natural Creamy Peanut Butter with Smucker’s Strawberry Preserves made these cookies PB&J perfection!  I love packing their lunches with Ziploc® Sandwich bags because I know their food will stay fresh and it won’t leak!  These adorable cookies even double as a great afterschool snack or possibly packaged in Ziploc® sandwich bags for a school bake sale!  They are as delicious as they are adorable.Let’s get cooking these Peanut Butter & Jelly Mini Cookie Sandwiches! Begin by preheating your oven to 350 degrees. Grab a mixing bowl and hand or stand mixer. Mix your room temperature butter, egg and peanut butter thoroughly. Add your sugars, baking powder and vanilla extract. Lastly, add in the flour for your peanut butter cookie dough.

Place parchment paper over a cookie sheet and dust with a sprinkle of flour. Place the cookie dough on top and prepare your rolling pin by spreading some flour onto it. Now, roll out the cookie dough about 1/4 inch thick. Add a sprinkle of flour as needed. Use a 1 inch cookie cutter to make as many cutouts as possible. Now, instead of picking up each cutout and moving it, you want to remove the excess cookie dough which can be rerolled for another batch of mini peanut butter cookies. Bake cookies for 12 minutes.

Once the cookies have cooled, you can create your Peanut Butter & Jelly Mini Cookie Sandwiches. I placed the peanut butter in a pastry and the strawberry preserve in another pastry bag to help me out today but spreading with a knife will work just fine. Flip the cookies over and put a dollop of peanut butter on half the cookies and strawberry preserve on the other half. Smush the peanut butter and strawberry preserve cookies together and sprinkle with a touch of confectioners sugar to complete.

  • 1 egg
  • .5 cup unsalted butter, room temperature
  • .5 cup Jif Natural Creamy Peanut Butter, plus more fore filling
  • .5 cup brown sugar
  • .5 cup granulated sugar
  • 1.5 cups flour, all-purpose
  • .5 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Smucker's® Strawberry Preserve to fill
  • Sprinkle of confectioner's sugar
  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, add room temperature butter, egg and .5 cup peanut butter. Mix thoroughly with hand or stand mixer.
  3. Add sugars, baking powder and vanilla extract. Mix well.
  4. Add in the flour and mix.
  5. Place parchment onto a cookie sheet.
  6. Sprinkle with flour and place the peanut butter cookie dough on top.
  7. Use a rolling pin to spread out the cookie dough evenly and as thin as possible.
  8. Grab a 1 inch cookie cutter. Yes, it is tiny! Press the cookie dough with the cookie cutter making your cutouts.
  9. Leave your cutouts and remove the extra cookie dough.
  10. Bake for 12 minutes.
  11. Let cool and turn over each cookie.
  12. Place peanut butter on half the cookies and strawberry preserve on the other half.
  13. Make your mini sandwich cookies with one peanut butter and one strawberry cookie smushed together.
  14. Sprinkle with confectioners sugar.

Like me I’m sure you’re ready to see what the year ahead holds for your child.  So many amazing opportunities are available to our kids these days.  But like me, I’m sure you’re also holding on to some of the classics of the past to help keep them little for just a little longer.

OREO is having an amazing My OREO Creation Sweepstakes that inspired me to make this Edible OREO Birthday Cake Cookie Dough. One of my favorite vault flavors is the Birthday Cake OREO Cookies and I got to thinking, why don’t they just mix the Cookie Dough flavor and Birthday Cake for one insanely amazing OREO creation? The Birthday Cake Cookie Dough OREO Cookie. Well, my idea hasn’t been developed yet so I made my own delicious bowl of OREO yum and am sharing the recipe with you all today.

This Edible OREO Birthday Cake Cookie Dough recipe that I created literally takes 5 minutes to put together. Whip up this recipe as an after school snack, movie night treat, or because you just have a major craving for cookie dough. No eggs are in the recipe so it is completely safe to eat! I have to admit something though. I am that person who eats cookie dough with raw eggs while baking. I just can’t help myself. Besides this recipe having no raw egg, there is no need to bake, cook, or even turn on an stove which is golden during these hot summer months. All you need :

  1. Mixing bowl.
  2. Hand or stand mixer.
  3. Measuring cups.
  4. A few basic ingredients:
    1. brown sugar
    2. butter, softened
    3. vanilla extract
    4. salt
    5. flour
    6. milk
    7. Birthday Cake OREO Cookies
    8. sprinkles

Add brown sugar and the softened butter to your mixing bowl. Use the hand mixer to thoroughly mix. Add vanilla extract, salt, flour and milk. Mix well. Hand stir in the Birthday Cake OREO Cookies and sprinkles. Place in fridge to chill and then enjoy! If you want to use this as a dip, no fridge time is necessary. That is it! This is a recipe that your kids can help in the kitchen with. I used almond milk but any type of milk will do fine. Get the complete instructions and ingredient amounts in the recipe card below.

Recipe type: Dessert
  • ¾ cup brown sugar
  • ½ cup butter, softened
  • ½ teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup flour

  1. Add brown sugar and softened butter to a medium sized mixing bowl. Use a hand or stand mixer to thoroughly mix.
  2. Add in vanilla extract, salt, flour and milk. Use the mixer to blend well.
  3. Chop your OREOS.
  4. Add sprinkles and OREOS to mixing bowl and mix in using a spatula.
  5. Place in fridge for 20 minutes.
  6. Serve.

Peanut Butter Frosting time! I love peanut butter. Love, love, love it. There is no better combination than chocolate and peanut butter in a dessert.

This frosting is so simple to make. The only trick to making this frosting, or really any frosting, is to make sure you use room temperature butter. This helps get that smooth and creamy texture perfect for frosting cupcakes or cakes.

For frosting cupcakes or cakes, I always use a large tip. Any of the Wiltons large tip set will work.  To frost a cupcake, make a small dollop in the middle and then make a swirl starting at the edges and going towards the center. Sprinkle some fun chocolate chips or sprinkles and done. Easy as that.

Peanut Butter Frosting

Peanut butter and chocolate is basically perfect together. For these chocolate cupcakes, I used a cake box mix and added an extra egg, swapped vegetable oil with butter and used milk. Plus, I like to add a packet of instant chocolate pudding for an extra chocolate taste. Add the peanut butter frosting and you have one heck of a dessert. You can also try a cake like this one from Simply Made Recipes, Triple Chocolate Cake with peanut Butter Frosting. You are seeing that correctly, triple chocolate. Yummy.

Simple peanut butter frosting for cupcakes and cakes.
Recipe type: Dessert
  • 3 cups confectioners sugar
  • ½cup heaving cream
  • 1 teaspoon vanilla extract
  • 1 cup room temperature unsalted butter
  • 1.5 cups creamy peanut butter, creamy
  1. Gather ingredients, hand or stand mixer, frosting bag and tip, measuring cups and a large mixing bowl.
  2. Add room temperature butter to your mixing bowl with peanut butter. Mix until smooth.
  3. Add in a cup of confectioners sugar and .5 cup heavy cream and mix until smooth.
  4. Add the remaining confectioners sugar and 1 teaspoon vanilla extract and mix again until you have a creamy, smooth frosting.
  5. Place into your frosting bag with tip and frost away!

My daughter is turning 2 years old and we are throwing a party and sharing 10 Tips for an Affordable Minnie Mouse Birthday Party !

#1 ) Have your child pick a theme and colors! We are focusing on Minnie Mouse today because my daughter is literally obsessed with all things Minnie. Where do these obsessions come from? She saw a Minnie Mouse one day in the store and for the past 4 months, everything from shoes, shirts to stuffed animals and toys have to be Minnie Mouse. Minnie Mouse was an obvious theme for this year and so we had to pick colors. Pinks, black, and white were some nice complimentary colors to go with. Pick at least 3 colors. One dark, one light and one bright for contrast and fun. Some great places to go for party supplies are Dollar Tree, Hobby Lobby and Target. Amazon is also a great place to search for ideas and grab fun items.

#2 ) Meal plan. I think a lot of people go over board in this department. Kids are pretty simple. Pizza, hot dogs, hamburgers work perfectly. We did some hot dogs on the grill for our guests with ketchup and mustard on the side. Cheap, simple, and all the kids are happy. Don’t feel like you have to feed everyone a big meal either. Maybe just have some snacks spread out and put your money and focus on other areas.

10 Tips for an Affordable Minnie Mouse Birthday Party {+ Cupcake Recipe}#3 ) Snacks are a must. If you do a meal or not, you need some snacks. Kids get hungry and the adults get bored but everyone can agree on eating. We did some popcorn in cute bags and a plate of watermelon. Popcorn is filling and healthier than other options and it is always nice to offer something fresh so shoot for a fruit or vegetable. Remember to buy some plates, napkins and utensils.

10 Tips for an Affordable Minnie Mouse Birthday Party {+ Cupcake Recipe}#4 ) Add special touches. I enjoy crafts so I made everything myself but even if you don’t have a crafty bone in your body, there are a lot of great party packs that are ready to go. Once you have a color and theme picked out, just search for what you need. You may end up spending more money doing this, especially if you want Minnie Mouse on everything. The little things go a long way though! I made this Minnie Mouse head below from Styrofoam balls. I spray painted the round Styrofoam and a stick, used toothpicks to assemble and poured some confetti in a vas. Really simple to do but so much fun to make and for our guests to look at.

Also, I had Minnie Mouse cut outs for everything. I used the felt with a sticky back and a cookie cutter in the shape of Mickey to use as my template. A hand drew a little bow as my template for all those.  I made the banner, cups, and popcorn bags with the Minnie Mouse felt cut outs to add a pop of Minnie and  to make the party table cohesive. I also used this cookie cutter for the watermelon cut outs.

10 Tips for an Affordable Minnie Mouse Birthday Party {+ Cupcake Recipe}#5 ) Let the kids dress up. Invite the kids to dress up as Mickey or Minnie or make your own mouse ears like I did. Having a theme and purpose to the party is important and going beyond that to play dress up adds a memorable experience and prompts bonding between children. You can buy mouse ears but this gets expensive! I found ones for under $2 a piece… these were about 50 cents to make. Big difference when you have 20 kids running around. All you need is cheap head bands, scissors, felt, glue, bobby pins to hold the ears in place until dry, and bows. I got lucky with these bows because they were on clearance so search around for a good priced bow or even make your own.

10 Tips for an Affordable Minnie Mouse Birthday Party {+ Cupcake Recipe}#6 ) Drinks! Refreshments are always on the party list.  A pink lemonade was a great choice with the theme and colors. We also had a cooler filled with caffeine free sodas and waters. If alcohol is acceptable for the adults, you can let them know to BYOB in the invite. Don’t forget the cups.

#7 ) Never underestimate the power of a balloon. Seriously. Throw a bunch of blown up balloons on the floor and it looks neat, plus the kids have a blast with them. Bonus! They are cheap.

10 Tips for an Affordable Minnie Mouse Birthday Party {+ Cupcake Recipe}#8 ) Have a craft and activities planned out.  I bought some wooden beads and ribbon so we could all sit in a  circle and do an activity together as a group. Pick at least one group activity. Pin the bow on Minnie would be fun. Cut out and paint a Minnie Mouse and a bunch of bows to see who can come the closest to pinning the bow in the right place, make a necklace or bracelet, paint, color, use stencils, or whatever you can think of. Try and pick an activity that is fun for all ages that will get a lot of participation.

#9 ) Cake! Save money by making your own cupcakes or cupcakes. Cupcakes are a lot easier to bake and decorate so I made these cute Minnie Mouse Cupcakes for the party. All you need is a box of chocolate or vanilla cake mix, mini Oreos, butter, vanilla extract, milk, confectioners sugar, eggs, cupcake liners, instant pudding, pink chocolate melts and a chocolate bow mold.

Minnie Mouse Cupcakes
Super simple Minnie Mouse Cupcakes for birthday celebrations!
Recipe type: Dessert
Serves: 24
  • 1 box chocolate or vanilla cake mix
  • 1 box chocolate or vanilla instant pudding mix
  • 4 eggs
  • 1 cup milk, + 2 tablespoons for frosting
  • 1 cup unsalted butter, room temperature
  • 2 cups confectioners sugar
  • 1 teaspoons vanilla extract
  • .5 pound pink chocolate melts
  • bag of mini Oreos
  1. Preheat oven to 350 degrees.
  2. You need a hand or stand mixer, muffin pan, cupcake liners, chocolate bow mold, measuring cups, mixing bowls and a glass bowl for chocolate, frosting tip and bag.
  3. Place cupcake liners into muffin pan.
  4. In a large mixing bowl, add box of cake mix, 1 cup milk, .5 cup room temperature butter, and 4 eggs.
  5. Use your hand or stand mix to blend well.
  6. Pour mix into the cupcake liners filling ¾ full.
  7. Bake for 18 minutes.
  8. Remove from oven and let cool.
  9. Make the chocolate bows. In a small glass bowl, microwave chocolate according to package directions. This should take about 1 minute. Stir well and use a spoon to fill each mold. Let the chocolate set before removing and repeat until you have enough bows.
  10. Begin your frosting. In a large bowl, add .5 cup of room temperature butter and mix until smooth. Add the 2 tablespoons of milk and vanilla extract and half the confectioners sugar. Mix well and add the remaining confectioners sugar until blended completely.
  11. Place the frosting into the pastry bag with a large tip. Frost each cupcake.
  12. Set 2 mini Oreos on each cupcake with a chocolate bow in the center.

Let your guests know what to wear, what foods you will be serving, that there will be crafts, and of course put the time and date. Also, have a phone number and email for RSVP. If you know who is coming, you can save money across the board by not buying too much!

Cupcake Basket is a fun gift idea for Mother’s Day, Valentine’s Day or birthdays. A simple, affordable gift that makes a big impact! Today, I made a simple vanilla cupcake with a special lavender frosting and set the cupcakes into this basket.


Cupcake Basket

What you need for a Cupcake Basket:

  • A medium sized basket
  • foam block
  • green cupcake liners
  • green tissue paper
  • cupcake ingredients
  • toothpicks
  • Wilton tip 2D
  • frosting bags
  • small fresh flowers to weave in (optional)

Cupcake Basket

Step one is to cook your cupcakes in the green liners. Use a box cake mix or your own special recipe of choice. I like to use a basic box cake mix, add an extra egg, swap oil for butter and add an instant pudding packet. This gives a simple box cake, more of a gourmet cupcake taste.

Once the cupcakes cool, make your lavender frosting recipe and decorate with Wilton tip 2D. To make the rose look, start in the middle and spiral around until the cupcake is covered.

Lavender Frosting Recipe
Cupcake Basket made with a simple but beautiful lavender frosting.
Recipe type: Dessert
  • 2 teaspoon lavender extract
  • 4 cups confectioners sugar
  • 4 drops red food coloring
  • 2 drops blue food coloring
  • 1 cup unsalted butter, room temperature
  1. In a large mixing bowl, add lavender extract, confectioners sugar and butter.
  2. use a hand or stand mixer to blend until smooth.
  3. Add the food coloring and mix.
  4. Place frosting into frosting bag with 2D tip and frost each individual cupcake. Begin in the center and spiral out.


Cupcake Basket

Once the cupcakes are completely frosted, place in the freezer. You will want to do this to put the bouquet together in the basket or else the cupcakes are too soft and everything will fall apart. As the cupcakes freeze, build your basket. Start with an empty basket of choice and add a foam square in the bottom. I cut my foam block today and stacked the smaller piece on top of the larger to add more volume inside. Use your toothpicks to hold it all together.

Cupcake BasketYou can see I used 2 toothpicks per cupcake to hold it in. Place a green cupcake liner to mark all your spots. Tear some of the green tissue paper and weave it between the cupcake liners to add more color and volume. This doesn’t need a lot of tissue paper, I only used about half a sheet.

Once the cupcakes are frozen enough that the cake that a toothpick smoothly goes in without any bending in the cake, place all your cupcakes. You may need to use a few extra toothpicks to hold all the cupcakes exactly where you want them. A single toothpick being used as a support on the bottom of the cupcake can really help some of those side angled cupcakes.

Once all the cupcakes are placed and steady, fill in any open spots in the bouquet with tissue paper or you can weave in some small flowers.

I really wanted to create a fun treat that kids can help make that was simple, time efficient and delicious! Easter Bunny Chocolate Dirt Cups hit the mark with a neat spin off from worms in dirt dessert. We layered Oreos, chocolate pudding, coconut, sprinkles with a Easter bunny Peep and candy Robin Eggs.

To make these, crush a sleeve of Oreos and sprinkle some in the bottom of a clear cup. Have the kids help whip up some instant chocolate pudding and fill the cup half full and then layer more crushed Oreos, followed by another layer of chocolate pudding. Let the kids finish decorating their Easter Bunny Dirt Cups with a few more Oreo crumbs, colored coconut, a bunny Peep and a few Robin Eggs. I had some Easter sprinkles laying around so we added a bit of those too. All there is to do now is dip a spoon in and enjoy!

Dessert doesn’t have to be complicated. Easter for me is all about spending time with my family and doing some creative projects like egg decorating and baking goodies. These Easter Bunny Dirt Cups are such a simple, fun, family friendly Easter Day treat for everyone to dig into and participate in.

  • 2 cups milk
  • 1 package instant chocolate pudding
  • 10 Oreos
  • 1 cup shredded coconut
  • 5-10 drops green food coloring
  • 15 chocolate mini Robin Egg candies
  • 5 bunny Peeps
  • Easter sprinkles (optional)
  1. Prepare your grass with 1 cup of shredded coconut with 5-10 drops green food coloring mixed in a small bowl.
  2. Chop your Oreos into crumbs. Either use a food processor, knife, or paddle in a Ziploc bag. I prefer to just finely chop the cookies. Place crumbs in a small bowl.
  3. Prepare your chocolate pudding according to package directions. All you do is add milk and whisk.
  4. Assemble the Easter Bunny Chocolate Dirt Cups. Place Oreo crumbs on the bottom of a cup, add a layer of pudding, some more Oreo crumbs, and a second layer of pudding.
  5. Decorate! Add more Oreos crumbs, green coconut, a bunny Peep, 3 Robin Eggs and some fun sprinkles.
  6. Enjoy!
