Banana Cake is a simple cake made with overripe bananas, flour, sugar, sour cream and basic baking ingredients with a cream cheese frosting and chopped pecans on top.
My household goes through phases of banana eating. Sometimes I have a whole lot bananas leftover at the end of the week. This Banana Cake recipe is perfect to use up those overripe bananas left at the end of the week for a weekend treat or a Friday afternoon pot luck at work.

Banana Cake is made moist and flavorful with just the right amount of banana. The cream cheese frosting is smooth and creamy. The chopped pecan garnish adds a nice crispy touch to each bite that completes this cake.
Tips & Tricks
As far as cakes go, this Banana Cake is pretty darn simple. The biggest tip I have when baking this cake is to make sure the butter and cream cheese is softened on the counter for awhile beforehand. This will make mixing the cake batter and beating the frosting so much easier.

Ingredients
Banana Cake
- 1/2 cup unsalted butter softened
- 1 cup sugar
- 2 eggs large
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 4 overripe bananas about 1 1/2 cups mashed
- 2 cups all purpose flour
- 2 teaspoon baking soda
- 1/2 teaspoon salt
Cream Cheese Frosting
- 8 ounces cream cheese
- 1/2 cup butter softened
- 1 teaspoon vanilla extract
- 3 1/2 cups confectioners sugar
- 1/4 cup pecans chopped for garnish
Instructions
Banana Cake
- Heat oven to 350 degrees.
- In a large mixing bowl, use a hand or stand mixer to beat 1/2 cup softened butter and 1 cup sugar until creamy.
- Add eggs, sour cream, mashed bananas, vanilla extract, flour, baking soda and salt. Beat mixture until all ingredients are incorporated into a batter.
- Spray 13 x 9 pan with non-stick spray. Pour batter in and bake for 35-40 minutes or until a toothpick inserted comes out clean.
- Let cake cool.
Cream Cheese Frosting
- In a mixing bowl, use a hand or stand mixer to beat 1/2 cup softened butter with 8 ounces cream cheese until smooth and creamy.
- Add teaspoon vanilla extract and slowly add in confectioners sugar in increments until you have a creamy frosting.
- Spread cream cheese frosting over a cooled banana cake and sprinkle with chopped pecans.
- Store in fridge until serving. You can also add fresh banana slices onto each slice of cake when serving for extra garnish.
This looks delicious!I’m not a huge fan of pecans so I might skip that part, but I definitely want to try this!
You can replace them with something crunchy you do like peanuts or walnuts or just leave them off completely.
