Chocolate Chia Pudding

Chocolate Chia Pudding is a more nutritious dessert made with chia seeds, honey, vanilla extract, cocoa powder, fresh strawberries, homemade whipped topping and whole milk.

The Perfect Pair

After a long week, sometimes the best cure is a chocolate dessert paired with a glass of  thirst quenching skim milk from Kroger. This time of year, I am looking for that decadent, delicious dessert full of chocolaty goodness but without the guilt.  Chocolate Chia Pudding hits the spot offering more nutritional value than the average chocolate filled treat and curbs my cravings.

How to Consume More Milk

Milk is a part of my families everyday diet. Every morning I wake up to a cup of freshly brewed coffee and add skim milk in mixed with a pinch of sugar. This morning ritual gets me up and moving for a great start to any day.

Real milk is a naturally nutritious and affordable food. Here are some great ways to consume real milk throughout the day!

  • Cereal with 1% milk.
  • Old fashioned oats cooked on the stove top with whole milk. Add fresh fruit over top for a hearty breakfast.
  • Add skim milk to a fruit or green smoothie for breakfast, lunch or snack time.
  • Pair with a peanut butter and jelly or grilled cheese sandwich.
  • Get your chocolate fix with a glass of delicious chocolate milk as an afternoon snack.
  • Use whole milk with your favorite baking recipes.
  • Dip chocolate chip cookies in a glass of cold 2 % milk for a family treat.

Chocolate Chia Pudding

Chocolate Chia Pudding have a nice chocolate flavor that is slightly sweet and a little bitter. The chia seeds inside sit overnight to absorb the milk and plump up becoming gelatinous giving the pudding thickness and texture.  Vanilla extract adds a little more flavor in pair with the cocoa powder and honey sweetens the dish.

What are Chia Seeds

Chia seeds are tiny edible seeds derived from a plant. These seeds are high in protein, Omega-3 fatty acids and fiber making them a great addition to a balanced diet. You can sprinkle chia seeds on top of meals, mix into smoothies or sauces, bake with and make puddings.

Process

Making a chia pudding is simple. It starts with a base of chia seeds and milk. Add a sweetener and other flavors to jazz your pudding up!

Chocolate Chia Pudding

  • Combine cocoa, honey, salt and vanilla extract into a bowl.
  • Whisk well and slowly add in milk while continuing to whisk the ingredients together.
  • Stir in chia seeds and let mixture sit in the refrigerator overnight.
  • Stir well and place over some freshly diced strawberries with a dollop of whipped topping.

Alternate Process

You can also use a food processor to mix all the chia pudding ingredients before placing in the fridge. If you want a creamier chia pudding, try grinding the seeds beforehand.

Chocolate Chia Pudding

Ingredients

  • 1 cup strawberries, diced

Chocolate Chia Pudding

  • 1 1/2 cups whole milk
  • 1/4 cup cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chia seeds
  • 1 pinch sea salt
  • 2 Tablespoons organic honey

Whipped Topping

  • 1 cup heavy whipping cream
  • 2 Tablespoons granulated sugar

Instructions

Chocolate Chia Pudding

  • Combine cocoa, honey, salt and vanilla extract into a bowl. 
  • Whisk well and slowly add in milk while continuing to whisk the ingredients together.  You can use a food processor instead.
  • Stir in chia seeds and let mixture sit in the refrigerator overnight. 

Whipped Topping

  • Place metal whisk and small metal bowl into freezer for 10 minutes.
  • Remove from freezer and pour in cold heavy whipping cream with sugar inside. Whisk until you have reached a stiff peak.
  • Store in refrigerator.

Chocolate Chia Pudding Cups

  • Dice the fresh strawberries. Place into the bottom of four glasses or jars.
  • Stir and pour in the chocolate chia pudding.
  • Add a dollop of your whipped topping.

It has more texture than regular pudding but it is really nice. Give it a try

I have actually never wanted to try a recipe that I’ve added to pinterest because I’m super lazy. LOL But I’d love to try this out! Looks delicious and healthy and something I won’t feel guilty for eating. AND chocolate. 🙂 YUM!5 stars
