Easter Bunny Chocolate Dirt Cups

Easter Bunny Chocolate Dirt Cups are a chocolaty, fun, child approved treat perfect for Easter celebrations.

I really wanted to create a fun treat that kids can help make that was simple, time efficient and delicious! Easter Bunny Chocolate Dirt Cups hit the mark with a neat spin off from worms in dirt dessert. We layered Oreos, chocolate pudding, coconut, sprinkles with a Easter bunny Peep and candy Robin Eggs.

To make these, crush a sleeve of Oreos and sprinkle some in the bottom of a clear cup. Have the kids help whip up some instant chocolate pudding and fill the cup half full and then layer more crushed Oreos, followed by another layer of chocolate pudding. Let the kids finish decorating their Easter Bunny Dirt Cups with a few more Oreo crumbs, colored coconut, a bunny Peep and a few Robin Eggs. I had some Easter sprinkles laying around so we added a bit of those too. All there is to do now is dip a spoon in and enjoy!

Dessert doesn’t have to be complicated. Easter for me is all about spending time with my family and doing some creative projects like egg decorating and baking goodies. These Easter Bunny Dirt Cups are such a simple, fun, family friendly Easter Day treat for everyone to dig into and participate in.

Simple, fun Easter desserts with chocolate pudding, oreos, coconut and Easter bunny.

Ingredients
  • 2 cups milk
  • 1 package instant chocolate pudding
  • 10 Oreos
  • 1 cup shredded coconut
  • 5-10 drops green food coloring
  • 15 chocolate mini Robin Egg candies
  • 5 bunny Peeps
  • Easter sprinkles (optional)
Instructions
  1. Prepare your grass with 1 cup of shredded coconut with 5-10 drops green food coloring mixed in a small bowl.
  2. Chop your Oreos into crumbs. Either use a food processor, knife, or paddle in a Ziploc bag. I prefer to just finely chop the cookies. Place crumbs in a small bowl.
  3. Prepare your chocolate pudding according to package directions. All you do is add milk and whisk.
  4. Assemble the Easter Bunny Chocolate Dirt Cups. Place Oreo crumbs on the bottom of a cup, add a layer of pudding, some more Oreo crumbs, and a second layer of pudding.
  5. Decorate! Add more Oreos crumbs, green coconut, a bunny Peep, 3 Robin Eggs and some fun sprinkles.
  6. Enjoy!

INGREDIENTS:

12 ounces dark chocolate, (chips or bar)

1 cup peanut butter baking chips

1/4 cup peanuts, (chopped )

INSTRUCTIONS:

Chop peanuts. If using a chocolate bar instead of chocolate chips, chop into pieces.

Place parchment paper onto a baking sheet.

Melt the chocolate and peanut butter in separate microwavable safe bowls or glasses. I like to use large coffee mugs. Melt in 30 seconds increments, stir between each until both are melted.

Pour the melted dark chocolate onto the parchment covered baking sheet. Use a spatula to spread the chocolate to 1/4 inch thickness.

Use a spoon to place the melted peanut butter chips on top in 4 lines.

Immediately take a knife or skewer to create the swirl pattern with the peanut butter.

Sprinkle chopped peanuts over top.

Chill for 15 minutes, break into 16 pieces and serve.

INGREDIENTS: ·  8 Tablespoons unsalted butter, (softened)
·  1 cup brown sugar
·  1/2 cup creamy peanut butter
·  1 egg, (large)
·  1 teaspoon vanilla extract
·  1 1/2 cups all-purpose flour
·  1/2 teaspoon baking powder
·  1/2 teaspoon baking soda
·  1/2 teaspoon salt

INSTRUCTIONS:

1.  Heat oven to 350 degrees.
2.  In a mixing bowl, add softened butter, brown sugar and peanut butter. Use a hand or stand mixer to beat the ingredients until creamy.
3.  Add egg and vanilla extract. Beat again.
4.  Add the remainder of the ingredients and beat again.
5.  Use a medium cookie scoop to place cookie dough balls onto a baking sheet.
6.  Use a fork to press down each cookie dough ball.
7.  Bake 10 minutes.
8.  Let cool on a cooling rack and serve.

INGREDIENTS:

1 cup unsalted butter
16 ounces pretzels
2 ounces dry ranch seasoning mix ( 2 packets) 
INSTRUCTIONS:

Heat oven to 350 degrees. 
In a small microwavable bowl, melt butter. This takes about 1 minute in the microwave. 
Stir in ranch seasoning. 
Pour pretzels into a large mixing bowl, followed by the butter mixture. Stir well and place pretzels onto a large baking sheet. 
Bake 15 minutes. Stir. Bake another 15 minutes. 
Let cool before serving.
