As a mom, one of the most exciting times of the year is back to school.  Just the mention of ‘back to school’ is nostalgic, don’t you think?  Add in your own kiddos and the excitement of the opportunities the year ahead holds for them and it’s almost too much to handle.  No matter what grade your kids are heading into or how many little ones you may still have at home it is a super fun time of year.  OK, I guess I shouldn’t pretend I’m not a little excited to have some order restored to our routines as well!  As much as we love lazy mornings in our pajamas and afternoons at the pool there comes a time of summer where we all just need something new and exciting!

We don’t do a ton of back to school shopping; however there is at least one day I haul the kiddos off to stock up on the items on the list their teacher sent them as well as the traditional back to school shoes.  But that’s all for the kids.  What I get excited about is starting to think of new creative and clever ways to make their days away from me special.

That’s where stocking up our pantry comes into play.  This is the fun part for me as a mom, knowing I have everything in my supply to keep everyone fed and happy.   I love knowing they will be excited when they open their lunch box in the middle of the day because it contains their favorite things. There is nothing worse than having them come home from school with half their lunch still in their box – so frustrating!  That’s why we headed off to our local ShopRite to load up on all of our favorites!

We love shopping at this new ShopRite store not too far from home.  They had everything we needed to stock up for a successful week of back to school meals.  I love how easy it is to maneuver through this store with the wide well marked aisles.  It’s always so easy to find what I’m looking for; they even have signage partway through the aisle to highlight items you could easily miss.  Wandering the aisles of this ShopRite made me so excited to create some new fun goodies for the kids’ lunches this year while grabbing some of our staples like Jif Natural Creamy Peanut Butter and Smucker’s Strawberry Preserves, along with Ziploc® Sandwich Bags.

The classic Peanut Butter and Jelly sandwich is a sure win in our house.  I may even sneak one on occasion when the kids are at school! As a mom, nothing is better than knowing your kids are getting a good dose of protein with the sweetness they love – coupled with using the same trusted brands you and your mom have used for years and years.  I can still remember Smucker’s Strawberry Preserves in my mom’s kitchen!  I’m not sure who first thought to put those two ingredients together, but they sure were genius.

Peanut Butter & Jelly Mini Cookie Sandwiches

Over the past few years our kids have really been into having a lunch of ‘snacks’ some days.  They love the bento box concept and I must admit it is fun to put together a bunch of things they enjoy that aren’t necessarily a sandwich.  But who can leave the PB&J out, really?  So I started brainstorming on other ways to still incorporate these time honored ingredients into their lunch boxes.

That’s when I came up with these Peanut Butter & Jelly Mini Sandwich Cookies.  They are the perfect sweet treat to pop into their lunch in a Ziploc® Sandwich Bag! Using the Jif Natural Creamy Peanut Butter with Smucker’s Strawberry Preserves made these cookies PB&J perfection!  I love packing their lunches with Ziploc® Sandwich bags because I know their food will stay fresh and it won’t leak!  These adorable cookies even double as a great afterschool snack or possibly packaged in Ziploc® sandwich bags for a school bake sale!  They are as delicious as they are adorable.Let’s get cooking these Peanut Butter & Jelly Mini Cookie Sandwiches! Begin by preheating your oven to 350 degrees. Grab a mixing bowl and hand or stand mixer. Mix your room temperature butter, egg and peanut butter thoroughly. Add your sugars, baking powder and vanilla extract. Lastly, add in the flour for your peanut butter cookie dough.

Place parchment paper over a cookie sheet and dust with a sprinkle of flour. Place the cookie dough on top and prepare your rolling pin by spreading some flour onto it. Now, roll out the cookie dough about 1/4 inch thick. Add a sprinkle of flour as needed. Use a 1 inch cookie cutter to make as many cutouts as possible. Now, instead of picking up each cutout and moving it, you want to remove the excess cookie dough which can be rerolled for another batch of mini peanut butter cookies. Bake cookies for 12 minutes.

Once the cookies have cooled, you can create your Peanut Butter & Jelly Mini Cookie Sandwiches. I placed the peanut butter in a pastry and the strawberry preserve in another pastry bag to help me out today but spreading with a knife will work just fine. Flip the cookies over and put a dollop of peanut butter on half the cookies and strawberry preserve on the other half. Smush the peanut butter and strawberry preserve cookies together and sprinkle with a touch of confectioners sugar to complete.

Peanut Butter & Jelly Mini Cookie Sandwiches with Jif Natural Creamy Peanut Butter Spread and Smucker’s® Strawberry Preserves sandwiched in delicious peanut butter cookie bites.

Ingredients
  • 1 egg
  • .5 cup unsalted butter, room temperature
  • .5 cup Jif Natural Creamy Peanut Butter, plus more fore filling
  • .5 cup brown sugar
  • .5 cup granulated sugar
  • 1.5 cups flour, all-purpose
  • .5 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Smucker's® Strawberry Preserve to fill
  • Sprinkle of confectioner's sugar
Instructions
  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, add room temperature butter, egg and .5 cup peanut butter. Mix thoroughly with hand or stand mixer.
  3. Add sugars, baking powder and vanilla extract. Mix well.
  4. Add in the flour and mix.
  5. Place parchment onto a cookie sheet.
  6. Sprinkle with flour and place the peanut butter cookie dough on top.
  7. Use a rolling pin to spread out the cookie dough evenly and as thin as possible.
  8. Grab a 1 inch cookie cutter. Yes, it is tiny! Press the cookie dough with the cookie cutter making your cutouts.
  9. Leave your cutouts and remove the extra cookie dough.
  10. Bake for 12 minutes.
  11. Let cool and turn over each cookie.
  12. Place peanut butter on half the cookies and strawberry preserve on the other half.
  13. Make your mini sandwich cookies with one peanut butter and one strawberry cookie smushed together.
  14. Sprinkle with confectioners sugar.

Like me I’m sure you’re ready to see what the year ahead holds for your child.  So many amazing opportunities are available to our kids these days.  But like me, I’m sure you’re also holding on to some of the classics of the past to help keep them little for just a little longer.
