Pickle Brined Chicken Tenders are a tasty main dish with chicken breast tenderloins brined in pickle juice with a breadcrumb coating that are baked to perfection.

With two young children in the house, chicken fingers is an inevitable menu item from time to time. If the kids had it their way, it would be eaten daily. If you are a parent, you understand this too well.  Pickle Brined Chicken Tenders add more flavor and tenderness than the average chicken finger so even us parents enjoy chicken finger night! You will never toss out another jar of empty pickles again without using those juices first.

Pickle Brined Chicken Tenders

Pickle Brined Chicken Tenders have a great crunchy outside with that perfect salty-pickle goodness on the inside with every bite. The pickle juice is such a fantastic way to flavor the chicken that not a lot of seasonings are needed in this recipe so you can keep dinner simple.

Process

  1. Let the chicken soak in pickle juice.
  2. Set up three bowls :   1) flour 2) whisked egg and 3) breadcrumb mixture.
  3. Dip the chicken tenders in each bowl in that order and place onto a baking sheet.
  4. Bake and serve with dip like honey mustard, barbecue sauce or ketchup.

Pickle Brined Chicken Tenders

Pickle Brined Chicken Tenders are a tasty main dish with chicken breast tenderloins brined in pickle juice with a breadcrumb coating that are baked to perfection.

Ingredients

  • 1 cup pickle juice
  • 1 pound chicken breast tenderloins
  • 2 cups breadcrumbs, plain
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon ground smoked paprika

Instructions

  • Heat oven to 375 degrees.
  • Place chicken tenderloins into a sealable storage bag with pickle juice.Place chicken fridge for a minimum of 2 hours. You can have it sit overnight.
  • Get 3 bowls. Place flour in 1 and whisk eggs in second.In the third bowl, mix together breadcrumbs, salt, pepper and paprika.
  • Create the breading for the chicken by dipping each piece of chicken into each bow. Begin with a coating of flour, then dip into egg and fully coat with breadcrumbs.
  • Place chicken onto baking sheet that has been sprayed with non-stick cooking oil.
  • Bake for 10 minutes. Flip and cook another 10 minutes.

Notes

* Italian breadcrumbs may be used for extra flavor.
